The Quatre-Quart Cake

This cake is simple, fast and delicious. It is just the perfect cake for any occasion.

I made it in mid-August for the weekend. As I had apples, I added two which I put on top of the dough before baking.

The quatre-quart cake (in English the pound cake) is traditionally a French Breton cake which takes its name from the fact that the four ingredients (flour, sugar, butter, eggs) are present in equal amounts (by weight) and therefore are each a quarter.

Ingredients
4 eggs (200g), sugar (200g), flour (200g), butter (200g, melted and cooled) and 1 teaspoon (11g) baking powder (optional). Use a 25 cm diameter cake pan.

Preparation
1. Put the eggs and sugar in a bowl. Whisk together.
2. Stir in the melted butter that has already been cooled and mix to obtain a smooth paste.
3. Stir in the sifted flour and mix until you obtain a homogeneous dough.
4. Add the baking powder.
5. Pour into a buttered and floured pan and place in the oven for 40 minutes at 180 ° C.
6. Remove from the mould by turning it upside down.

  9. This looks beautiful - love the texture of the cake. Since it is apple-picking season here, this is a great way to use it! I have rarely seen apples in pound cake like this...great idea!
