Brown Muffins




A former work colleague brought these muffins to the office once: we loved them. She gave me her muffin recipe which is so successful that even my mum is a fan.

1 cup of self-raising flour
1 cup of wheat bran
¼ cup of sugar
1 cup of milk
1 egg
2 teaspoons of olive oil
½ teaspoon of salt
Sultanas

1. Mix together the dry ingredients.
2. Mix the liquid ingredients; egg, milk, oil.
3. Add the liquid ingredients to the dry.
4. Add few sultanas.
5. Butter a muffin mold.
6. Bake in a moderate oven (180°C) for about 25 minutes. Cool muffins in the mold.

Serves 4 to 5

An Intimate Address…ThaiOTop

Birchermüesli (with raspberry and kiwi)



Today I want to share with you a fabulous and healthy breakfast recipe, a variation of Dr Bircher-Benner’s Birchermüesli. I got it from a family member ages ago and I can tell you from experience it does wonders for your body and it is so yummy. I like mine with kiwi and raspberry; it is creamy and crusty with a slightly acid taste.

Birchermüesli cream
250g low-fat séré
1 blood orange (or Navel orange)
1 tablespoons of linseed oil
1 tablespoon of sugar
Fruit: apple or kiwi or raspberry or banana

Cereals
50% oatmeal
20% wheat bran
10% soy flakes
20% mixture of 5 cereals

1. Pour the cereals into a Tupperware and mix them, so you can take a portion when you want without preparing the mixture every time.
2. Squeeze the juice of an orange, pour into a bowl with the séré, add a tablespoon of sugar and a tablespoon of linseed oil. Mix until you obtain a homogeneous cream. Place in a Tupperware so you can take only the quantity you want each time. (Keeps for up to two days in the fridge).
3. Put some of the séré cream in a bowl then add two to three tablespoons of cereal mixture and let it soak for a while.
4. Finally, add the fruit of your choice; kiwi slices, banana slices, crushed raspberry, grated apple.

Serves 2 to 3

Tips: Use seasonal fruits because they taste better.
