A former work
colleague brought these muffins to the office once: we loved them. She gave me her
muffin recipe which is so successful that even my mum is a fan.
1 cup of self-raising
flour
1 cup of wheat bran
¼ cup of sugar
1 cup of milk
1 egg
2 teaspoons of
olive oil
½ teaspoon of salt
Sultanas
1. Mix together
the dry ingredients.
2. Mix the liquid ingredients;
egg, milk, oil.
3. Add the liquid
ingredients to the dry.
4. Add few
sultanas.
5. Butter a muffin
mold.
6. Bake in a
moderate oven (180°C) for about 25 minutes. Cool muffins in the mold.
Serves 4 to 5
I never cease to marvel at your photography skills!
ReplyDeleteOhhh that is very kind...still learning :-)
DeleteI like to boost my recipes with a few nutrient packed ingredients too - such as wheat bran. I'm not sure anyone else would actually enjoy my cooking though, as I tend to over-healthize everything. ;-)
ReplyDeleteI am sure my former colleague would love your recipes...by the way, she studied in Camberra.
ReplyDeleteThanks for your visit ;-)
