This post celebrates my favourite desserts
from a cafe/bakery/pastry shop in Geneva. I have only documented delicacies here that I
have tried personally (and many times...).
For this first series, I’ll start with
Martel in Carouge, a company that exists since 1818. Today, it has grown to a chain of 8 shops or tea rooms - all with exquisite pastries!
1.
Saint-Honoré
On a circular base of puff pastry stands a
ring of choux pastry filled with Chiboust cream and finished with whipped
cream. The choux puffs are dipped in caramelized sugar and attached side by side.
2.
Opéra
Layers of almond sponge cake soaked in
coffee syrup, alternating with ganache and coffee buttercream, and covered in a
chocolate glaze.
3.
Raspberry Mille-Feuilles
Three layers of puff pastry alternating
with two layers of whipped crème pâtissière and fresh raspberries. The top pastry
layer is dusted with confectioner's sugar.
4.
Dacquoise Pistachio with Raspberry and Passion Fruit Mousses
A base of pistachio cake completed with
layers of raspberry mousse and passion fruit mousses.
5.
Symphony cake
A shortbread cake with red fruit coulis,
filled with chestnut cream.
6.
Lemon tart
A pastry case with an intense lemon cream
filling.

The photography here is extraordinary - it makes me want to try to eat the cakes from the screen! Having tasted the shop's wares first hand, I can wholeheartedly concur with this recommendation.
